As an Olive oil Sommelier and certified International olive oil expert it is probably not surprising that the top of the world natural food, for me, is Extra virgin olive oil of high quality – the result of the plant´s diamonds of an absolute finest carat.

I am a geek when it comes to quality for the senses and health of everyday life... to transform nature´s raw materials for gastronomic enjoyment has been my focus since I started at cookery school in 1994. 

Since then, I am a trained process technologist specializing in food, a nutrition expert with many years of course organization, teaching experience, personal guidance and olive oil Sommelier, an international certified olive oil expert at IOC.

Health in Balance

After a prolonged serious illness, I searched in stores for an intense fresh high-quality extra virgin olive oil, with a high content of polyphenols and antioxidants. These herbal substances strengthen the immune system and prevent serious diseases such as inflammation, poor digestion, dementia and certain types of cancer.

The many shelf meters of olive oils in the stores gave me the choice between "how neat is the bottle and what is the price". But how do the oils taste? How should I use them? Which food are they suitable for? There started my desire to communicate expert knowledge about high quality and a good health in balance.

High quality to us and our children

For me, quality and sustainability come from taking care of the earth and the olive trees that have grown on the planet for the last 14,000 years. Hippocrates described 60 various diseases that could be cured by olive oil, today we have research that can explain why.

High-quality extra virgin olive oil is an important foundation for a good life as well as health in balance. It is important that our children learn to understand and recognize the taste of quality.
